This recipe is quick and easy for when you just want to get dinner served asap with a minimum of prep. Use the leftover rotisserie chicken plus a few pantry ingredients to stretch this into a meal which can be prepped, cooked and served from skillet to table in 20 minutes.

How To Make PF Chang’s Lettuce Wrap

Ingredients

Serves 3-4 people. Twenty minutes to make if using leftover chicken.

1-1.5 breasts of leftover seasoned chicken or rotisserie chicken (depends upon size of chicken breast)

1 can of water chestnuts

2 tablespoons low sodium soy sauce

2 tablespoons of brown sugar (sugar substitute if watching sugar intake)

1/2 teaspoon rice vinegar

1 teaspoon minced garlic

2 to 3 tablespoons dried chives or fresh chives

1 tablespoon of cooking oil or olive for stir fry

Iceberg lettuce or white rice or rice sticks

Instructions for Lettuce Wrap Recipe

  1. Chop the water chestnuts and chicken into dice size pieces.
  2. Mix together: low sodium soy sauce sauce, brown sugar, garlic, chives and rice vinegar.
  3. Heat one tablespoon of oil in a largefrying pan at medium high heat.
  4. Add the diced chicken and water chestnuts to the pan and then add the stir fry sauce.Cook for five five minutes on medium heat then lower to medium low heat for an additional three to five minutes.
  5. Ready to serve! Use leaves of iceberg lettuce as the wrap for the traditional recipe or serve over white rice. Rice Sticksare optional for oxalate friendly guests; however rice flour which is the main ingredient in rice sticks are high on the oxalate list.
  6. PF Chang’s fans will notice their is no special sauce as this is the down and dirty quick to the table copycat version of PF Changs lettuce wraps made the low oxalate way!

Recipe For PF Chang’s Lettuce Wrap Tips

This is a child or adult friendly recipe which mimics the PF Changs Lettuce Wrap from the store. No, it is not the exact same taste, but a close economical copycat recipe. Use lettuce for the adults and white rice for any non lettuce friendly child. The recipe does skew to the sweet side and the brown sugar can be adjusted to taste. Rice vinegar is not on the Harvard list; the amount is negligible for the entire recipe.

FreezerFriendly

This version of PF Changs lettuce wraps freezes wonderfully. I portion into single portions to freeze. The chicken mixture can go directly from the freezer to the microwave and to the table to serve in a lettuce wrap or with white rice.

Brown Sugar Alert

As I mentioned the recipe can be sweet which makes it appealing to children.The brown sugar can be adjusted by starting with 1.5 tablespoons for your first trial run and adjust accordingly after to suit your taste. You can always add more brown sugar after you cook then taste test the chicken mixture.

Notes

PF Chang’s fans will notice their is no special sauce as this is the quick to the table copycat version of PF Changs lettuce wraps made the low oxalate way! Add your favorite store bought sweet, spicy or sweet and spicy sauce if desired. I actually like the recipe better without the sauce 🙂

This is a freezer friendly meal! The chicken stir fry freezes very well. Make a large batch and save a few portions to freeze and add fresh lettuce or rice when serving.
